Xylitol木糖醇是一種天然的糖類，常常用來做為食物的甘味劑。
要了解Xylitol對抑制牙菌斑、防治蛀牙之所以這麼有效，就必須知道牙菌斑是如何形成的。我們口腔內的細菌約有400種，各自的數量在數十億之間，其總菌數可想而知，當然大部分是無害的。我們常常強調口腔清潔，可是再好、再強的口腔清潔用品，包括牙膏、漱口水等，都無法使口腔的細菌消除掉，就算可以沖刷掉一些，但口腔內潮濕、溫暖的環境，使得細菌不久後很輕易的再長回來。所以要藉著減少細菌量來減低蛀牙的發生，絕對是不切實際的作法。我們應該要做的事是找出真正會造蛀牙的細菌，並且有效的防制它的危害，才能事半功倍的解決問題。現在我們知道這個會造成蛀牙的細菌叫做果糖鏈球菌（Streptococcus mutans）。造成果糖鏈球菌的形成牙菌斑、產生蛀牙作用機轉如下：

1.果糖鏈球菌會將蔗糖發酵變成乳酸，造成口腔內的酸性環境
2.口腔內的酸性環境會使牙齒去礦物質化，進一步侵蝕琺瑯質
3.酸性環境會使其他怕酸的細菌無法生存，因而增強果糖鏈球菌 的破壞性
4.果糖鏈球菌生成黏性高的多醣（polysaccharides），形成牙菌 斑黏在琺瑯質表面，不易移除

Xylitol就是針對果糖鏈球菌的作用，提供有效的反制。首先，果糖鏈球菌分解Xylitol的過程非常的緩慢，無法使其發酵產生乳酸，因而不會造成口腔的酸性環境；其次，不會生成黏性高的多醣附著在牙齒表面；最後，Xylitol會促使果糖鏈球菌變的較不具侵略性。針對最後一項，有一個很有趣的研究顯示，由於果糖鏈球菌是有傳染性的，所以媽媽會經由親密接觸而將之傳給幼兒，增加幼兒得蛀牙的機會。而在長期嚼含Xylitol口香糖的媽媽當中，兒童的蛀牙發生率竟然要比只使用含氟牙膏加上殺菌漱口水的媽媽所養育的兒童，要低的多！可能的解釋是這些經由Xylitol“處理”過的果糖鏈球菌，變的友善了。
